Château Doisy Daëne L'Extravagant de Doisy-Daëne 375mL 2017

Château Doisy Daëne L'Extravagant de Doisy-Daëne is a minute, extraordinarily concentrated cuvée made at this classified Barsac estate only in the years that allow it.

L'Extravagant was conceived by Denis Dubourdieu, the Bordeaux professor and oenologist who ran Doisy-Daëne for decades, as an exercise in pushing concentration as far as the fruit will go. The grapes come from a small selected parcel and are gathered berry by berry at a stage when botrytis cinerea has reduced them to shrivelled husks carrying sugar levels far beyond those of an ordinary Barsac. Fermentation stops early and a very high level of residual sugar remains. Only a few barrels are made in a successful year, and in most vintages none is produced at all, which is why the wine so rarely appears.

It asks for a very small pour at the end of a meal and should be served well chilled; it will keep for decades.
