Château d'Yquem 1er Grand Cru Classé Supérieur en 1855 2008

Château d'Yquem is the supreme Sauternes, the only estate ranked Premier Cru Supérieur, and this bottle has had well over a decade to develop.

For centuries the estate has been synonymous with sweet wine of the highest order, owned by the Lur-Saluces family from 1785 and by LVMH since 1999. The vineyard occupies a gentle hill at the heart of the appellation, and each autumn the team harvests Semillon and Sauvignon Blanc in multiple passes, selecting only grapes concentrated by noble rot. The wine is fermented and matured in new oak barrels. 2008 was a cool, late season in Bordeaux, which gave Yquem a subtle combination of richness and rare vivacity, with bright acidity keeping the sweetness lively.

Chill it to around 11 degrees and let it open in the glass. With some age behind it, it's wonderful with roast pork and apple, aged Comté or a classic tarte tatin, and it will go on for many years.
