Description
Château Guiraud, 1er Grand Cru Classé En 1855 Sauternes is one of the eleven Premiers Crus Classés of Sauternes, made on high ground above the village that gives the appellation its name.
The appellation depends on a quirk of geography: the cold, spring-fed Ciron meets the warmer Garonne here, and the autumn mists that form allow Botrytis cinerea to take hold on ripe fruit. Growers pick by successive passes through the rows, choosing shrivelled berries by hand, which is why production is tiny and the wines are costly to make. Guiraud has been farmed organically for many years and was among the first classified estates in Bordeaux to gain certification. It maintains hedgerows, trees and a conservatory of old Sémillon and Sauvignon Blanc plant material as part of the property, and Sauvignon Blanc plays a larger role here than at most neighbours.
Serve chilled at 8 to 10 degrees with foie gras, blue cheese or fruit desserts.
