Description
Chateau Haut-Bailly is a Cru Classé de Graves from Pessac-Léognan, on the gravel rises south of the city of Bordeaux.
The property sits at Léognan on a mound of deep gravel over a bed of sand and fossilised shell, and it was among the estates classified as Crus Classés de Graves in the 1950s. Unusually for a classified Graves property it makes red wine only, led by Cabernet Sauvignon with Merlot and small amounts of Cabernet Franc and Petit Verdot. Its most celebrated asset is a parcel of very old vines planted in the nineteenth century as a field blend of several varieties, which still contributes to the grand vin. The American banker Robert G. Wilmers bought the estate in 1998, and substantial investment in vineyard and cellar has followed.
Decant and serve at about 17 degrees with roast lamb, beef or hard cheeses; it will improve for fifteen years or more.
