Description
Château Haut-Bailly is a Cru Classé de Graves in Pessac-Léognan, a red-only estate on a gravel rise a short distance south of the city of Bordeaux.
The vineyard has been recognised since the sixteenth century, and its standing in the modern era owes more to steady, conservative winemaking than to reinvention. Haut-Bailly is best known for a block of very old vines, planted before the phylloxera era and containing a jumble of varieties, which is picked and fermented together and goes into the grand vin. Cabernet Sauvignon leads the blend, supported by Merlot with smaller amounts of Cabernet Franc and Petit Verdot. Since 1998 the estate has belonged to the family of the American banker Robert G. Wilmers, who invested heavily in the vineyard and built a new gravity-fed cellar into the slope. It is classified for red wine only.
Best with roast lamb, beef or game, served at 16 to 18 degrees and decanted while young; it rewards fifteen years or more in the cellar.
