Description
Château La Chapelle d'Ausone is the second wine of Château Ausone, historically one of the two properties at the very top of the Saint-Émilion classification.
Ausone occupies a small amphitheatre of vines on the limestone escarpment at the edge of the town of Saint-Émilion, with cellars quarried out of the rock beneath. The name recalls the Roman poet Ausonius, said to have owned a villa in the district in the fourth century. The estate is planted largely to Cabernet Franc alongside Merlot, an unusual balance for the right bank and one suited to cool limestone slopes; the vineyard is small and worked by hand. La Chapelle is assembled from parcels and lots not selected for the grand vin, made in the same cellar by the same team, and it is produced in modest quantity.
Serve at 16 to 18 degrees with roast lamb, beef or game, decanting while young; it will cellar for a decade.
