Description
Château La Dominique, Grand Cru Classé is a Saint-Émilion property on the western edge of the appellation, hard against the Pomerol border beside Cheval Blanc.
The vineyard lies on sand and gravel over clay, soils with more in common with neighbouring Pomerol than with the limestone plateau around the town of Saint-Émilion, and Merlot dominates the planting with Cabernet Franc in support. The estate has belonged to the construction magnate Clément Fayat since 1969, and in 2014 it opened a new winery designed by the architect Jean Nouvel, clad in red stainless steel with a rooftop terrace looking out across the vines. Its rank of Grand Cru Classé comes from the Saint-Émilion classification, which is reviewed roughly every ten years rather than fixed in perpetuity as in the Médoc.
Serve at 16 to 18 degrees with roast beef, duck or mushroom dishes, decanting while young; it will cellar comfortably for a decade.
