Description
Château Lafaurie Peyraguey is a botrytised sweet white from Bommes, in the heart of the Sauternes appellation.
The château, a walled building of mediaeval origin, sits on a gravel and clay rise close to the Ciron, the cool tributary whose autumn mists set off the noble rot on which Sauternes depends. It was ranked a first growth in the 1855 classification. Sémillon dominates the vineyard, with Sauvignon Blanc planted alongside it, and the grapes are gathered berry by berry in successive passes so that only shrivelled fruit is taken, a method that makes yields tiny and harvests long. Fermentation and ageing take place in barrel. Since 2014 the estate has belonged to Silvio Denz of the crystal house Lalique, who restored the château and its cellars.
Serve at around 8 degrees with foie gras, blue cheese or a tart of stone fruit. And it will keep for many years.
