Description
Château Pavie-Decesse, Grand Cru Classé is a small Saint-Émilion property on the limestone plateau directly above its more famous neighbour, Château Pavie.
Pavie-Decesse was carved out of the Pavie estate in the nineteenth century and sits at the top of the côte, on shallow clay over the hard limestone that runs beneath the town, ground that gives small berries and concentrated fruit in the driest years. Merlot dominates the planting, with a little Cabernet Franc, and the vineyard is a genuinely small one even by the standards of a commune full of modest holdings. Gérard Perse bought the property in 1997, shortly before acquiring Pavie itself, and the two are farmed and made by the same team, with low yields, hand sorting on the table and long ageing in French oak barrels.
Serve at around 18°C with roast beef, venison or hard cheese, decanting well ahead; the wine is built to age for two decades in the best vintages.
