Description
Château Pavie, Grand Cru Classé is one of the great estates of Saint-Émilion, spread across the limestone plateau and the steep côte that falls away below it.
The name is said to come from the peaches once grown on the slope. The vineyard runs over three distinct terroirs, limestone on the plateau, clay and limestone on the côte, and sandier soils at the foot, which is unusual breadth for a single Saint-Émilion property. Gérard Perse bought Pavie in 1998 and set about rebuilding it, cutting yields, replanting and constructing a gravity-fed winery cut into the hill. Merlot leads the blend, with Cabernet Franc and a smaller share of Cabernet Sauvignon. In 2012 Pavie was promoted to Premier Grand Cru Classé A, the top rank of the appellation's classification and a level shared with only a handful of properties.
Serve at 17 to 18°C with rich meat dishes, decanting two hours ahead; strong vintages will keep for several decades.
