Description
Château Pavie Macquin, 1er Cru Grand Classé sits on the limestone plateau above the town of Saint-Émilion, on some of the best ground in the appellation.
The property is named after Albert Macquin, the nineteenth-century Saint-Émilion figure who did more than anyone to establish grafting onto American rootstock as the answer to phylloxera, effectively saving the region's vineyards. The vines lie on the plateau and the côtes near Château Pavie, on clay over hard limestone, soils that hold water well through dry summers. Merlot leads the blend, supported by Cabernet Franc and a little Cabernet Sauvignon. Ranked a Premier Grand Cru Classé in the Saint-Émilion classification, the estate has been run for many years by Nicolas Thienpont with Stéphane Derenoncourt consulting, a partnership known for restrained extraction and careful vineyard work rather than heavy handling in the cellar.
Serve at 17 to 18°C with beef, lamb or duck, decanting an hour ahead; it repays a decade or more of cellaring.
