Cien Y Pico Winemakers Gallant Bobal is a red from the high inland plateau of Castilla-La Mancha, in central Spain.
Bobal is among Spain's most planted red varieties and one of its least exported, grown almost entirely in the interior of the south-east, around Manchuela and Utiel-Requena, on limestone at seven hundred metres and more. Thick-skinned and high in natural acidity, it spent most of the twentieth century disappearing into bulk wine and rosado, and only in recent decades have growers begun bottling the old bush-vine plots on their own account. The names across this range nod to Don Quixote, whose creator set his knight errant wandering across these same plains, and the wines are drawn from the sort of dry, high, unglamorous country that produces them. This is high, dry, continental country, six or seven hundred metres above the sea, with hot days and sharply cooler nights.
Serve at around sixteen degrees with grilled meats, sausages or a plate of manchego.
