Ingredients:
- 500g mixed fish fillets (e.g., monkfish, hake, or red snapper)
- 200g shellfish (e.g., prawns or clams)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, peeled and chopped
- 1 small potato, diced
- 1 cup white wine
- 1/2 cup fish stock
- 1 tsp smoked paprika
- 1 bay leaf
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
- In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened, about 5 minutes.
- Add the tomatoes and cook for another 3–4 minutes until they break down.
- Stir in the diced potato, smoked paprika, and bay leaf, then pour in the white wine and fish stock. Bring to a simmer and cook until the potato is tender, about 15 minutes.
- Add the fish fillets and shellfish to the pot, cooking for 5–7 minutes until the fish is cooked through and the shellfish has opened.
- Season with salt and pepper to taste. Garnish with fresh parsley and serve with lemon wedges on the side.
