Recipe

Poisson à la Marseillaise (Fish with Garlic and Tomato)

Ingredients:

  • 4 white fish fillets (snapper or cod)
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 100mL dry white wine
  • 1 tsp herbes de Provence
  • Salt and pepper, to taste
  • Fresh parsley, chopped

Instructions:

  1. In a pan, heat olive oil and sauté onion and garlic until soft.
  2. Add chopped tomatoes and tomato paste. Cook for 5 minutes.
  3. Pour in white wine, add herbes de Provence, and simmer for 10 minutes.
  4. Place fish fillets in the sauce, season with salt and pepper, cover and cook gently for 8–10 minutes.
  5. Garnish with fresh parsley and serve with rice or crusty bread alongside a glass of Clos Sainte Magdeleine Cassis Blanc for a coastal Provençal experience.
