Poisson à la Marseillaise (Fish with Garlic and Tomato)
Ingredients:
- 4 white fish fillets (snapper or cod)
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 1 small onion, sliced
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 100mL dry white wine
- 1 tsp herbes de Provence
- Salt and pepper, to taste
- Fresh parsley, chopped
Instructions:
- In a pan, heat olive oil and sauté onion and garlic until soft.
- Add chopped tomatoes and tomato paste. Cook for 5 minutes.
- Pour in white wine, add herbes de Provence, and simmer for 10 minutes.
- Place fish fillets in the sauce, season with salt and pepper, cover and cook gently for 8–10 minutes.
- Garnish with fresh parsley and serve with rice or crusty bread alongside a glass of Clos Sainte Magdeleine Cassis Blanc for a coastal Provençal experience.
