Dégorgement tardif means late disgorgement: the wine stays in contact with its yeast lees for years longer than usual before the sediment is removed, which protects it from oxygen and deepens its texture and flavour. The fruit comes from the estate at Pipers River in Tasmania, planted in 1986. These wines are released in small quantity.

Serve at 10 degrees with roast poultry, truffle dishes or aged cheese. Drink over the next eight years.
