Clover Hill Rosé d’Assemblage MV

Clover Hill Rosé d'Assemblage takes its colour from blending still red wine into the base, the Champagne method.

Assemblage refers to that blending: rather than drawing colour from the skins, a measured portion of still Pinot Noir is added before the second fermentation, which gives precise control over both hue and flavour. The fruit comes from the estate at Pipers River in northern Tasmania, planted in 1986 for sparkling wine.

Serve at 9 degrees with salmon, duck or a soft cheese. Drink over the next five years.
