Description
Coeur Clémentine Côtes de Provence Rosé is a direct-press blend built around Grenache, Cinsault and the rare local Tibouren.
Côtes de Provence is the largest appellation in the south-east and the reference point for pale, dry Provençal rosé. The fruit here comes from organically managed chalk and clay parcels near Puget-Ville, in the middle of the appellation. The blend is Grenache and Cinsault with the indigenous Tibouren, a variety associated with the herbal character of the garrigue and increasingly scarce, plus a splash of Syrah. Jean-Christophe Audéoud handles the winemaking, using the traditional direct-press method rather than saignée, so the juice runs off the skins quickly and the colour stays light. Maturation takes place in concrete and stainless steel, with no oak. The wine finishes completely dry, with a fine, almost white-wine texture and a little phenolic grip at the end.
Best in its first two years. Serve at 8-10°C with salade niçoise, grilled prawns or a bowl of aioli and crudités.
