Description
Coeur Clémentine Côtes de Provence Rosé is a dry Provence blend that includes the rare local Tibouren alongside Grenache and Cinsault.
Côtes de Provence is the largest appellation in the south-east and is overwhelmingly given over to rosé, made by direct pressing to keep the colour pale and the palate dry. The fruit for this wine comes from organically managed chalk and clay parcels around Puget-Ville, in the heart of the appellation. The blend is led by Grenache and Cinsault with a splash of Syrah, but the point of difference is Tibouren, an indigenous Provençal variety said to bring the scent of garrigue, the herby scrub that covers the hills here. Jean-Christophe Audéoud handles the winemaking, using the traditional direct-press method and then maturing the wine in concrete and stainless steel. The result is racy and crunchy, finishing completely dry with a gentle grip and a twist of white pepper.
Drink young, within a year or two of release. Serve at 8-10°C with grilled prawns, salade niçoise or barbecued chicken.
