Description
Colet-Navazos Extra Brut Reserva is a traditional-method Penedès sparkling made with flor yeast and finished with a sherry dosage, released here from the bottle-aged library.
The partnership between Sergi Colet and Equipo Navazos began in 2003 out of a conversation about what Jerez and Champagne have in common: chalk soils and the central role of aged reserve wines. The wines fall under the Penedès DO and are made by the Champagne method from Xarel·lo and Chardonnay base wines grown in Colet's organically tended vineyards at Pacs del Penedès and Sant Martí Sarroca. Sherry country enters twice over, first in the secondary fermentation, which uses a small quantity of flor yeast, and again in the dosage, where different La Bota sherries are used. The Extra Brut spends roughly three years on lees and the Reserva a further year. This bottle comes from the producers' bottle-aged library, so it carries considerably more time on cork than a current release and has gained savoury complexity accordingly.
Ready to drink now, it suits oysters, jamón, fried fish or hard cheese. Serve at 8°C in a white wine glass rather than a flute.
