This light and flavourful vegetable tart, featuring fresh zucchini, capsicum, and ricotta, pairs beautifully with the crisp acidity and delicate minerality of Collavini Ribolla Gialla IGT Benedete 2022.

Ingredients (Serves 4):
  • 1 sheet puff pastry
  • 200g ricotta cheese
  • 1 zucchini, thinly sliced
  • 1 red capsicum, thinly sliced
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
Instructions:
  1. Prepare the Pastry: Preheat the oven to 180℃. Line a tart tin with the puff pastry and prick the base with a fork. Pre-bake for 10 minutes.
  2. Make the Filling: In a bowl, mix the ricotta, eggs, Parmesan cheese, oregano, salt, and pepper until smooth.
  3. Assemble the Tart: Spread the ricotta mixture evenly over the pre-baked pastry. Arrange the zucchini and capsicum slices on top in a decorative pattern. Drizzle with olive oil.
  4. Bake: Bake for 25-30 minutes, or until the vegetables are tender and the tart is golden brown.
  5. Serve: Let the tart cool slightly before slicing. Serve warm or at room temperature.
