Risotto ai Funghi (Mushroom Risotto)
Ingredients:
- 1 cup Arborio rice
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups vegetable stock
- 1 cup dry white wine (preferably from Friuli)
- 200g mixed wild mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pan, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3–4 minutes.
- Add the rice and cook for 1–2 minutes, stirring to lightly toast it.
- Pour in the wine and let it absorb into the rice.
- Gradually add the stock, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. Continue until the rice is creamy and al dente, about 18–20 minutes.
- Meanwhile, sauté the mushrooms in a separate pan until tender and browned, about 5–7 minutes.
- Stir in the cooked mushrooms, Parmesan cheese, and adjust seasoning with salt and pepper.
- Serve the risotto warm, garnished with fresh parsley, alongside a glass of Colavini Ribolla Nera IGT 2021 for a harmonious pairing.
