Description
Disznókő Dry Furmint is a tank-fermented dry white from a first-growth Tokaj estate better known for its sweet wines.
Tokaj in north-eastern Hungary built its reputation on botrytised Aszú, but dry Furmint has become a serious category in its own right over the past two decades, and the variety's naturally high acidity and firm structure suit it well. Disznókő is one of the classified great vineyards of the region, and this bottling draws on several plots within it, on volcanic and clay soils, that are set aside specifically for the dry wine. The fruit is hand-harvested with particular care taken to remove any botrytised berries, since even a small proportion would push the wine towards sweetness and blur its line. Vinification is in tank only, with no oak, which leaves the Furmint's savoury, faintly smoky character and its acidity unobscured.
Good on release and capable of several years in bottle. Serve at 10-12°C with roast pork, smoked trout or a plate of pungent cheese.
