Disznókő Tokaji Aszú 5 Puttonyos 500ml 2013

Disznókő Tokaji Aszú 5 Puttonyos is a botrytised sweet white from one of the historic first-growth estates of Tokaj.

Tokaji Aszú owes its character to volcanic terroir, indigenous Hungarian varieties, chiefly Furmint with Hárslevelű, Zéta and others, and an ancient method still followed today. Healthy grapes are harvested first and made into a base wine. The aszú berries, shrivelled by noble rot and holding almost no juice, are picked separately and added to that base wine, whole or as a paste, so they swell and can be pressed effectively. Fermentation proceeds at a crawl for as long as it takes, and the wine then matures at least two years in Sauternes barrels from Château Suduiraut. Puttonyos once counted the hods of aszú paste added; today the classification rests on residual sugar, with 5 Puttonyos requiring a minimum of 120 grams per litre. This is bottled in 500ml.

Ready on release and capable of decades in bottle. Serve at 8-10°C with blue cheese, foie gras or a simple apricot tart.
