Description
Disznókő Tokaji Dry Furmint is a dry white from an estate far better known for its sweet Aszú wines.
Tokaj, in north-eastern Hungary, is classified ground with a long history, and Disznókő is one of its first-growth estates, farming a single block of vineyard on the southern edge of the region. Dry Furmint is a relatively recent addition to the range and makes the case for the variety outside its sweet-wine role. The fruit is drawn from several plots on volcanic and clay soils that are set aside from the outset for dry wine, and the grapes are hand-harvested with particular care to remove any botrytised berries, since even a little botrytis would change the character of the wine. Vinification takes place in tank, with no oak, in keeping with the estate's preference for purity and zesty freshness, and the aim is to capture the juiciness and minerality that come naturally to Furmint on this ground.
Drink it over the next four or five years as an aperitif, with oysters and other seafood, or with poultry and game birds. Serve at 10–12°C.
