Description
Disznókő's Dry Furmint is a tank-fermented white from the Tokaj estate better known for its sweet wines.
Tokaj in north-eastern Hungary built its reputation on botrytised Aszu wines, but dry Furmint has become a serious category in its own right over the past two decades, and Disznoko is among the estates that have taken it up properly. This bottling is 100% Furmint drawn from several plots on volcanic and clay soils, fruit that was always destined for dry-wine production rather than being a by-product of the Aszu harvest. It is picked by hand with particular care taken to remove any botrytised berries, which would blur the line, and vinified in tank so nothing gets between the grape and the glass. The house style here is purity and zesty freshness, aiming to capture the juiciness and stony minerality natural to the variety, and the result has something of a good Chablis about it, especially in its flinty, salt-licked close.
Drink now or over the next three to five years. Serve at 10-12°C as an aperitif, with oysters and other seafood, or with roast game birds.
