Disznókő Tokaji Late Harvest Furmint is a sweet Tokaji made from mainly botrytised bunches rather than the berry-by-berry selection used for Aszú.
Tokaj's autumn mists off the Bodrog and Tisza rivers bring noble rot most years, and Késői Szüret, or late harvest, is the region's less laborious sweet style: whole botrytis-affected bunches and clusters are picked and vinified together instead of being sorted berry by berry. Disznókő is a first-growth estate on the southern edge of the Tokaj hills, where László Mészáros makes this wine chiefly from Furmint with a small proportion of Zéta, the fruit shrivelled to around half its original volume. The bunches are macerated briefly before pressing, and the wine is racked to used French oak, including barrels from the estate's sister property Château Suduiraut in Sauternes, where it matures for twelve months. The relatively short ageing keeps the wine fresh, and it carries around 90 grams per litre of residual sugar balanced by firm acidity.
It is fresh enough that it need not wait for dessert; serve at 8-10°C as an aperitif, with goat's cheese, pâté on toast, or a fruit tart.
