Domaine Alain Graillot Crozes-Hermitage 1.5L MAGNUM 2021

Domaine Alain Graillot Crozes-Hermitage, here in magnum, comes from organically farmed vines of 40 to 50 years on the stony Terrasse des Chassis.

Graillot is the benchmark address of Crozes-Hermitage, now run by Maxime Graillot and carrying two stars in the Revue du Vin de France's guide to the wines of France. The vines sit at Pont-de-l'Isère on the Terrasse des Chassis, where the soil is an ancient alluvial deposit of sand, gravel and smooth river stones, and they are farmed organically. Fruit is loaded into lined concrete vats without destemming and given a pre-ferment maceration of two to five days before a natural fermentation. Ageing takes place in used François Frères barriques of one to seven years, bought from leading Burgundy estates, with 20-hectolitre Stockinger ovals playing a growing part since 2011. The magnum format slows the wine's development further.

Enjoyable young and likely to improve for a decade or more. Serve at 16-18°C with grilled lamb cutlets, char-grilled vegetables or a pepper-crusted steak.
