Tarte à l'Oignon (Alsatian Onion Tart)
Ingredients:
- 1 shortcrust pastry sheet
- 500g onions, thinly sliced
- 2 tbsp butter
- 100g bacon rashers or speck, chopped (optional)
- 2 eggs
- 200mL crème fraîche
- Salt and pepper, to taste
- Pinch of nutmeg (optional)
Instructions:
- Preheat the oven to 180°C. Line a tart tin with the shortcrust pastry, trimming the edges if needed.
- In a pan, melt the butter over medium heat. Add sliced onions (and bacon, if using) and cook until the onions are soft and lightly golden.
- In a bowl, whisk together eggs, crème fraîche, salt, pepper, and a pinch of nutmeg if desired.
- Spread the cooked onions (and bacon) over the pastry base. Pour the egg mixture on top.
- Bake for 25–30 minutes or until the tart is set and lightly browned on top.
- Slice and serve warm with a chilled glass of Domaine Albert Mann Cuvée Albert Riesling 2021 to complement the tart's savoury-sweet onion flavours.
