Recipe

Tarte à l'Oignon (Alsatian Onion Tart)

Ingredients:

  • 1 shortcrust pastry sheet
  • 500g onions, thinly sliced
  • 2 tbsp butter
  • 100g bacon rashers or speck, chopped (optional)
  • 2 eggs
  • 200mL crème fraîche
  • Salt and pepper, to taste
  • Pinch of nutmeg (optional)

Instructions:

  1. Preheat the oven to 180°C. Line a tart tin with the shortcrust pastry, trimming the edges if needed.
  2. In a pan, melt the butter over medium heat. Add sliced onions (and bacon, if using) and cook until the onions are soft and lightly golden.
  3. In a bowl, whisk together eggs, crème fraîche, salt, pepper, and a pinch of nutmeg if desired.
  4. Spread the cooked onions (and bacon) over the pastry base. Pour the egg mixture on top.
  5. Bake for 25–30 minutes or until the tart is set and lightly browned on top.
  6. Slice and serve warm with a chilled glass of Domaine Albert Mann Cuvée Albert Riesling 2021 to complement the tart's savoury-sweet onion flavours.
