Recipe

Coq au Riesling (Chicken in Riesling)

Ingredients:

  • 1.5kg chicken pieces (thighs, drumsticks, or a combination)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 200g mushrooms, sliced
  • 1 cup Riesling (ideally from Furstentum Grand Cru)
  • 1 cup chicken stock
  • 1 sprig fresh thyme
  • 2 tbsp crème fraîche (optional, for extra creaminess)
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions:

  1. In a large casserole dish or deep skillet, heat the butter and olive oil over medium-high heat.
  2. Season the chicken pieces with salt and pepper, then brown them on all sides. Remove and set aside.
  3. Sauté the onion, garlic, and mushrooms until lightly browned.
  4. Deglaze the pan with Riesling, scraping up any browned bits. Return the chicken to the dish, then add the chicken stock and thyme.
  5. Bring to a simmer, reduce heat to low, cover, and cook for 30–40 minutes or until the chicken is tender. Stir in the crème fraîche if desired.
  6. Garnish with chopped parsley and serve hot alongside a crusty baguette or creamy mashed potatoes.
