Truite aux Amandes (Trout with Almonds)
Ingredients:
- 2 whole trout, cleaned and deboned if preferred
- 30g butter
- 2 tbsp olive oil
- 50g sliced almonds
- Juice of ½ lemon
- 1 tbsp chopped parsley
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions:
- Pat the trout dry and season inside and out with salt and pepper.
- Heat olive oil in a large pan over medium-high heat. Cook the trout for 3–4 minutes per side, or until the skin crisps and the flesh flakes easily.
- Remove the trout to a warm plate. Reduce heat to medium, then add butter and sliced almonds to the pan.
- Toast the almonds until golden, stirring frequently to avoid burning.
- Stir in lemon juice and parsley, seasoning to taste.
- Pour the almond mixture over the trout and serve immediately with lemon wedges.
