Truite aux Amandes (Trout with Almonds)
Ingredients:
- 2 whole trout, cleaned and deboned if preferred
- 30g butter
- 2 tbsp olive oil
- 50g sliced almonds
- Juice of ½ lemon
- 1 tbsp chopped parsley
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions:
- Rinse and pat dry the trout, then season both inside and out with salt and pepper.
- Warm the olive oil in a large pan over medium-high heat. Carefully place the trout in the pan, cooking for 3–4 minutes per side or until the skin is crisp and the flesh flakes easily.
- Transfer the cooked trout to a warm plate. Reduce heat to medium, then add butter and sliced almonds to the same pan.
- Stir the almonds until they turn golden brown, being careful not to burn them.
- Add lemon juice and parsley, seasoning with salt and pepper to taste.
- Drizzle the almond sauce over the trout, garnish with lemon wedges, and serve immediately.
