Domaine Alphonse Mellot Sancerre Edmond is hand-harvested from fifty to ninety-year-old vines on the southern slope of La Moussière.
La Moussière lies below the town of Sancerre and has been the core of the Mellot holdings for generations; the domaine farms it biodynamically. Edmond comes from the southerly part of the site, where the Saint-Doulchard marls give way to a blanket of weathered limestone rocks known locally as calcaires à astartes. The vines are between fifty and ninety years old and cropped even lower than those for the Génération Dix-Neuf. Fermentation and élevage took place in 600-litre barrels, with a portion raised in a 2,000-litre egg-shaped Taransaud wooden ovum, and the wine spent around twelve months on fine lees. The result is a structured, deeply mineral white with the weight and layering of fine white Burgundy, made in a register that has little to do with the textbook style of the appellation.
These wines can live twenty to thirty years and generally begin to peak after five to ten. Serve at 10-12°C with roast chicken, grilled turbot or aged Comté.
