Recipe

Quenelles de Brochet à la Lyonnaise (Pike Dumplings in Nantua Sauce)

Ingredients:

  • 300g pike fillet, finely minced
  • 2 eggs
  • 100ml thick cream
  • Salt and white pepper, to taste
  • 100ml fish stock
  • 50g butter
  • 150ml Nantua sauce (or substitute with crayfish bisque and cream)
  • Nutmeg, a pinch

Instructions:

  1. Blend pike, eggs, cream, salt, pepper, and nutmeg until smooth.
  2. Form small dumplings and poach them gently in simmering fish stock for about 10 minutes.
  3. Preheat oven to 180°C. Place quenelles in a buttered baking dish and cover with warm Nantua sauce.
  4. Bake for 15 minutes until golden and bubbling.
  5. Serve hot with steamed vegetables or rice and a glass of Domaine André Perret Condrieu 'Coteau de Chery'.
