Description
Domaine Bernard Baudry Chinon Blanc is a rare white from a red-wine appellation, made from Chenin Blanc on two parcels of the estate’s best limestone.
White plantings are scarce in Chinon and are usually relegated to the sites Cabernet Franc does not want. Baudry, who farms organically at Cravant-les-Côteaux, does the reverse and gives Chenin the pick of the limestone. This wine comes from two small parcels: 0.8 hectares behind the Château de Sonnay, propagated from cuttings taken at Domaine Huet in Vouvray, and a plot on the eroded limestone of Le Clos Guillot. The vines are relatively young here, in the 12- to 15-year range. Matthieu Baudry presses slowly and gently and lets the juice ferment on its own yeasts in old 500- and 600-litre barrels until it is dry. The wine is bottled unfiltered, and the barrels are old enough to add texture rather than oak flavour.
Drinking now and will hold five to seven years. Serve at 10-12°C with grilled fish, roast pork or a fresh goat’s cheese.
