Domaine Bernard Baudry Chinon La Croix Boissée is the estate’s top red, from a south-facing parcel of chalky white limestone above the cellars at Cravant-les-Côteaux.
La Croix Boissée sits on very chalky white limestone above the village, and the combination of that soil, the southerly aspect and the altitude gives what Baudry regards as Chinon’s longest-lived and most elegant wines. The vines are 30 to 50 years old and the farming is organic. Bernard Baudry judged the site suited to a Burgundian style of élevage, so the wine ferments on natural yeasts in open wooden casks, then spends 24 months in old Burgundian pieces — no new oak at any stage — followed by a further nine months in cement. It is bottled without filtration. The signature of these chalky soils is aromatic intensity and vibrant freshness carried over a deep core of mineral-edged Cabernet Franc fruit.
Still young; give it a few more years and drink over the following decade. Serve at 16-18°C with roast lamb, game or a mature hard cheese.
