Domaine Bernard Baudry Chinon Le Clos Guillot 2019

Le Clos Guillot is a four-hectare parcel on the clay-limestone plateau above Cravant-les-Coteaux that the Baudrys replanted in 1995 after it had been abandoned.

Chinon lies on the Vienne just before it joins the Loire, and its best reds come from Cabernet Franc grown on the tuffeau limestone of the coteaux rather than the gravel of the valley floor. Bernard Baudry, a graduate of the wine school at Beaune, started with two hectares in 1975 and built the estate to around thirty, farmed organically and now certified; his son Matthieu joined in 2000 and leads the domaine today. Each soil type is bottled separately. Clos Guillot sits high on the plateau overlooking the valley, open to the wind for much of the year, on sand and clay over limestone, a cool, late-ripening combination that gives a firmer and more mineral wine than the estate's gravel and alluvial cuvées. Fruit is hand-picked, fermented in concrete with indigenous yeasts and then aged in barrel, the wood old enough to stay in the background.

Worth five to ten years in the cellar and best decanted when young; serve at 16-18°C with roast lamb, duck or a firm goat's cheese.
