Domaine Bernard Baudry Chinon Le Clos Guillot is an organically grown Cabernet Franc from a clay and tuffeau slope next to Le Chêne Vert.
Chinon's finest reds come not from the river gravels but from the clay and yellow limestone slopes above them, the tuffeau that also built the local châteaux. Le Clos Guillot faces south-east on exactly that geology, very close to Le Chêne Vert, the vineyard made famous by Charles Joguet. Domaine Bernard Baudry farms organically and planted this parcel between 1993 and 2000; it also holds a small block of the domaine's remaining ungrafted vines, once bottled separately as Franc de Pied and now blended in here. Harvesting is by hand and yields never exceed 40 hectolitres per hectare. Fermentation takes place in large wooden fermenters with regular pigéage aimed at gentle extraction, and after about 20 days on skins the wine matures for 12 months in oak of two or three vintages, then nine months in cement, and is bottled unfiltered.
Drink over the next ten years, with roast lamb, duck or a plate of hard cheese. Serve at 16 degrees.
