Domaine Bernard Baudry Chinon Les Grézeaux is drawn from the estate's oldest vines and is only made in warm, dry vintages.
Chinon sits on the Vienne in Touraine and is Cabernet Franc country, with the character of each wine largely determined by whether the vines sit on sand, gravel or limestone. Les Grézeaux is a gravelly terroir over limestone and clay on the Sonnay plateau above Cravant, directly in front of the Baudry cellar, planted with vines of forty to sixty years. Matthieu Baudry notes the parcel performs best in warm, dry years and so does not bottle it in every vintage; none was made in 2013, for instance. Picking is by hand and fermentation runs fifteen to twenty days in cement vats. The wine is then matured in cement until bottling two winters after the harvest, with no new oak at any stage. It carries a depth and concentration unusual in Cabernet Franc, held in check by bright acidity.
Approachable now and built to age ten to fifteen years. Serve at 16-18°C with roast lamb, rillettes or a goat's cheese from the Loire.
