Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet 1.5L MAGNUM 2022

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet, in magnum, comes from the largest holding in the vineyard and from its only certified-organic grower.

The Côte de Léchet is a premier cru on the left bank of the Serein, a steep, south-east facing hillside above the village of Milly, on the Kimmeridgian marl and limestone that gives Chablis its saline cut. As happens across Burgundy, the vineyard has become closely identified with a single grower: Domaine Bernard Defaix farms eight hectares here, more than anyone else, and the cellars sit at the foot of the Léchet hill. Didier Defaix is the site’s emblematic vigneron and its only certified-organic grower. A quarter of the fruit is fermented and matured in old, neutral barrels that previously held the domaine’s old-vine Réserve Léchet bottling, with the balance raised in tank to keep the wine transparent to its site. The magnum is sealed under screwcap.

The larger format will slow its development, so this can be drunk over the next three to ten years. Serve at 10-12°C with oysters, seared scallops or roast chicken.
