Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet comes from the largest holding in the vineyard, farmed by its only certified organic grower.

Côte de Léchet is a west-facing Premier Cru on the left bank at Milly, a steep slope of Kimmeridgian marl that tends to give taut, high-toned, distinctly saline Chablis. Domaine Bernard Defaix holds more of it than anyone else, and the cellars sit at the foot of the Léchet hill, so the family and the vineyard are effectively synonymous. Didier Defaix now runs the estate and is the site's only certified organic grower. The house style here favours precision over weight, with fermentation and ageing that keep oak out of the picture and let the chalky bite of the terroir carry the wine. It is sealed under screwcap, which suits the style and holds the freshness well.

Drinking now and will reward five or more years in bottle. Serve at 10-12°C with oysters, scallops or a goat's cheese salad.
