Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet comes from the premier cru where the domaine is the largest landholder and the only certified organic grower.

Côte de Léchet is a steep premier cru on the left bank of the Serein at Milly, just outside Chablis, on the Kimmeridgian marl that runs beneath the appellation’s best sites. Domaine Bernard Defaix holds eight hectares within it, more than any other grower, and its cellars sit at the foot of the Léchet hill; as much as any pairing in Chablis, the cru and the estate have become synonymous, with Didier Defaix its emblematic vigneron. He is also the only grower on the slope farming to certified organic standards. A quarter of the wine was fermented and matured in old, neutral barrels that had previously held the domaine’s old-vine Réserve bottling from the same site, the remainder staying in tank. It is sealed under screwcap.

Approachable now and worth five to eight years. Serve at 10-12°C with oysters, grilled marron or a white-fleshed fish.
