Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet comes from the largest single holding in the vineyard, and from its only certified-organic grower.
Côte de Léchet is the premier cru that rises directly above the village of Milly on the left bank of the Serein, facing south-east on Kimmeridgian marl. Domaine Bernard Defaix holds nine hectares here, more than anyone else, and the cellars sit at the base of the hill, which makes Didier Defaix the site’s emblematic vigneron as well as its only certified-organic farmer. The vineyard has a reputation for white-fruited, notably mineral wines with more intensity than the neighbouring Beauroy. To build complexity without overwhelming that character, a quarter of the wine is fermented in old, neutral barrels previously used for the estate’s old-vine Réserve Léchet, the balance staying in tank. The wine is sealed under Diam.
Approachable on release but will gain for five to eight years. Serve at 11-12°C with roast chicken, scallops or a mature comté.
