Description
Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet is made by the largest single owner in a premier cru that rises directly above the family's cellars.
Côte de Léchet is a steep, narrow premier cru on the left bank of the Serein, overlooking the village of Milly. Defaix holds nine hectares there, more than any other grower, and the cellars sit at the foot of the hill. The vines face southeast on thin Kimmeridgian marl over limestone, an exposure that ripens the fruit evenly while the shallow soils keep yields modest. Léchet has a long-standing reputation for producing some of the most tightly wound and stony wine in Chablis, white-fruited in character and firmer than the more generous right-bank crus. Fermentation is spontaneous and the wine is raised on fine lees, with the emphasis on the site rather than on oak. It is bottled under Diam.
Worth three to eight years in the cellar and good with scallops, roast chicken or a gruyère tart. Serve at 10-12°C.
