Domaine Bernard Defaix Côte de Léchet Réserve comes from a single hectare of almost 70-year-old vines in the premier cru the family is most closely identified with.
Côte de Léchet lies at Milly, on the left bank of the Serein, and Defaix is the largest holder in the vineyard, with cellars at the foot of the hill. Didier Defaix is also the only certified organic grower on the site. Alongside the standard Côte de Léchet, he bottles this selection from old vines on the mid-slope, with the aim of showing a more layered and seductive wine than the regular cuvée. Half is matured in tank and half in wood, mainly 228-litre used Burgundian pièces from Jaeger-Defaix in Rully. The barrel portion rests 12 months on fine lees with regular bâtonnage before being blended back, and the wine is bottled 18 months after harvest.
Drinking now and worth eight to ten years. Serve at 10-12°C with scallops, roast pork loin or a soft cow's milk cheese.
