Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Réserve 2023

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Réserve is a selection from a single hectare of vines approaching seventy years of age.

Côte de Léchet is the premier cru on the left bank of the Serein overlooking the village of Milly, on Kimmeridgian marl with a steep, exposed aspect that gives taut, saline Chablis. Domaine Bernard Defaix holds nine hectares here, the largest single holding in the cru, and its cellars sit at the foot of the hill. Alongside the standard Côte de Léchet, the family bottles this Réserve from one hectare of old vines on the mid-slope, the intention being to show what that vine age adds in layering and depth. Half the wine matures in tank and half in wood, mainly 228-litre used Burgundian pièces passed on from Jaeger-Defaix in Rully. It rests twelve months on fine lees with regular bâtonnage before the two portions are blended, and is bottled eighteen months after harvest under a Diam closure.

Drinking now and worth eight years or more in bottle. Serve at 10-12°C with scallops, roast pork or a Gruyère tart.
