Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet Sans Soufre is an unfiltered, zero-sulphur bottling from the largest single holder in the vineyard.
Côte de Léchet is the premier cru that rises above the village of Milly, south-west of Chablis proper, perfectly exposed to the south-east. Domaine Bernard Defaix holds nine hectares within it, more than any other grower, with cellars at the foot of the hill, and Didier Defaix is also the site’s only certified-organic vigneron. Léchet is known for white-fruited, taut wines and, as Andrew Jefford has written, some of the most mineral Chablis of all. To build complexity, Defaix ferments a quarter of this wine in old, neutral barrels previously used for the domaine’s old-vine Réserve bottling. Sans soufre means without sulphur: Defaix has run zero-sulphur trials for years and, encouraged by his customers, bottled this separate unfiltered cuvée. It is fleshy and seamless, with mixed citrus, chalky drive and mouthwatering freshness. Sealed under Diam.
Best drunk over the next three to four years, and keep it cold in transit and storage. Serve at 10-12°C with oysters, grilled whiting or goat’s cheese.
