Description
Domaine Bernard Defaix's village Chablis comes from parcels at Milly and the neighbouring communes, and is raised entirely in tank.
The Chablis appellation covers the Kimmeridgian marls that ring the town on both banks of the Serein — a compacted seabed of clay and limestone full of small fossilised oysters, which growers here credit for the saline, flinty character of the wines. Bernard Defaix set up at Milly, on the left bank, in 1959; his sons Sylvain and Didier now run the domaine with Didier's wife Hélène, and the vineyards have been certified organic by Ecocert for around fifteen years. This village wine draws on parcels of varying age across Milly and the communes around it. Fermentation is with natural yeasts, and where the premiers and grands crus see a year in barrel and tank, the village Chablis is kept in temperature-controlled tank alone and bottled the following July. There is no lees stirring and no oak.
Drink now and over the next four or five years. Serve at 10–12°C with oysters, steamed mussels or a simple grilled whiting.
