Description
The village Chablis of a family estate at Milly whose largest holding is eight hectares of the Côte de Léchet premier cru.
Chablis lies well north of the rest of Burgundy, on Kimmeridgian limestone and marl full of small fossil oysters, and the cold continental climate gives a Chardonnay that is dry, taut and low in obvious fruit. Domaine Bernard Defaix is based in the hamlet of Milly, directly below the Léchet hill, and is now in its fourth generation, with Didier Defaix looking after the vineyards and his brother Sylvain the winemaking across about 27 hectares. Organic conversion began in 2008 on the Rully holdings and part of Côte de Léchet, certified by Ecocert, though certification was lost in 2016 when severe mildew pressure forced conventional treatment. Fermentation runs on natural yeasts and malolactic follows of its own accord. The village Chablis is raised in stainless steel without oak, which leaves the saline, chalky line intact.
Drink young, within three or four years, while it is at its most incisive. Serve at 10-12°C with oysters, grilled white fish or a goat's cheese salad.
