Domaine Bernard Defaix Chablis 2020

Domaine Bernard Defaix Chablis is a certified organic village wine from four parcels of mature vines on the left bank of the Serein.

Chablis lies detached from the rest of Burgundy in the far north, where Kimmeridgian marl full of fossilised oyster shell gives the appellation its saline cut and its capacity to age. The Defaix family are based at Milly, and this village bottling is drawn from four parcels of thirty-plus-year-old vines around Milly and Poinchy on the left bank of the river, opposite the Grand Cru slope. The fruit is certified organic. The wine was fermented with wild yeasts and aged on fine lees for ten months in glass-lined tanks, so there is no oak involved at any stage; the lees work builds a little texture without softening the line. It is sealed under screwcap, which suits a wine of this style for the Australian market.

Drink now and over the next four years. Serve at 10-12°C with oysters, grilled prawns or a plate of cold seafood.
