Domaine Bernard Defaix Chablis 2021

Domaine Bernard Defaix Chablis is a village wine from four parcels of vines over 30 years old around Milly and Poinchy, on the left bank of the Serein.

Chablis is Burgundy’s northern outpost, where Chardonnay grows on Kimmeridgian limestone and the wines are shaped by cool conditions and salinity rather than by ripeness or oak. Domaine Bernard Defaix is based at Milly, beneath the Côte de Léchet on the left bank of the Serein, and is certified organic. This village bottling draws on four parcels of mature vines on the slopes around Milly and Poinchy. Fermentation runs on wild yeasts and the wine is aged for ten months on fine lees in glass-lined tanks, so no oak comes between the drinker and the site; whatever texture the wine carries comes from that lees contact. It is sealed under screwcap.

Ready on release and best over the next three to four years. Serve at 10-12°C with oysters, grilled whiting or a goat’s cheese salad.
